Cod, Bacon and olive soup



Red onion

Garlic Mushrooms

Chicken stock

Chopped tomatoes

Streaky bacon

Cod Loin

Brazil nuts

Sliced black olives

Mozzarella cheese.

1) Fry some garlic and chopped onion with butter in a pan. Add chopped streaky bacon, then cod chunks.

2) Once the cod starts to flake, add the mushrooms, stir in chicken stock in some water and some chopped tomatoes.

3) Add some chopped Brazil nuts and olives. Let it simmer whilst stirring for 10 minutes.

4) Finally, add some sliced mozzarella cheese and fresh parsley. Let the cheese warm for a few minutes then ladle the soup into a bowl and enjoy!
