Cod, Olive and Bacon Soup


Cod, olive & bacon soup

Fry some garlic, onions and fresh chilli with butter in a pan. Add chopped streaky bacon, then cod chunks. Once the cod starts to flake, stir in chicken stock in some water and some chopped tinned tomatoes. Next add mushrooms and olives. Let it simmer whilst stirring for 10 minutes, then stir in some spinach. Finally, add some cubes of feta (or mozzarella) cheese. Let the cheese warm for a few minutes then ladle the soup into a bowl and enjoy!
