Tuna, Sweet Potato Wedges & Salad

This makes for a light, fresh, healthy evening meal, but with that feeling of comfort food with the sweet potato wedges!

 

Chop the sweet potato into wedges and place on a baking tray, coated with a little coconut oil or butter, sprinkle on some salt and paprika, then oven bake at around 180 degrees C for about 30 to 40 minutes, turning them over half way through. Fry the tuna in a little butter for just a few minutes each side (it should still be a little pink inside). As usual, make the salad as big, colourful and tasty as you like! - I think the following go well with the tuna and sweet potato: walnuts, feta, watermelon, basil, carrot, spinach, cherry tomatoes, radishes, olive and olive oil. Sprinkle a little rosemary on and voila!!

 

You may notice - no sweet potato wedges in the photo!  That’s because I used up all my sweet potato on the my chicken and burrata on tomato meal!! (see the blog post for this on my website) So I just made the salad even BIGGER to make up for it
