Stuffed Marrow

Courgettes are one of my favourite vegetables, and they're even better stuffed! For this recipe, fry some onion, garlic, mixed herbs and mince, and add some tinned tomatoes.

Next, scoop out the middle of some thickly sliced marrow sections and fill with the contents of the pan. Oven bake, wrapped in foil at gas mark 6 for half an hour. Top off with grated Parmesan cheese.
