Stuffed Pepper with Tuna

This makes an excellent light lunch. The pepper is stuffed full of all the tasty protein, energy and micronutrients you can lay your hands on and grilled to perfection in 10 minutes.

Use a split pepper, tuna, olive oil, balsamic vinegar, pine nuts, prosciutto, chopped mushrooms, cheese, and top off with a sprinkle of Italian herbs. Pop in the oven for about 20 minutes and enjoy.
