Minted Lamb with Tomatoes & Burrata Mozzarella
This healthy, nutritious evening meal is one of my favourites!
Start by grilling lamb chops. Then, chop a large tomato in half, top with the Burrata and add to the grill. Boil some asparagus tips for 3 or 4 minutes. Add olives and blueberries, drizzle olive oil over the cheesy tomato and garnish with chopped fresh basil.
